Croque en Bouche - a 'piece monte' of profiteroles filled with a vanilla cream patissier and assembled with caramel sugar. Decorated with almond croquent, sugar almonds and sugar flowers. This traditional French Masterpiece is stunning and impressive looking, a real show stopper. 

 It is about 3 foot high and has about 200x pieces of deliciousely filled profiterols. Depending if you would like to serve the cake as dessert or after Dinner as a late treat it would be enough for 70 portions counting 3 pieces per person or a lot more if people just help themselfs. If you would like extra profiterols we can make as many as you wish, and they can be filled with the same cream patissier or just whipped cream, or why not go for chocolate mousse, lemon cream, hazelnut or cafe flavour and covered in rich chocolate glaze.

In this case you could offer a selection of profiterols to your guest's.
