Austrian Sacher Torte
A rich chocolate sponge cake with real chocolate melted through it before baking, but as light as a feather then filled with blackcurrant jam and smooth chocolate ganache flavoured with your favourite tipple. These cakes can be finished the traditional way with roll out icing in white or ivory and decorated with piped icing and sugar flowers.

Madeira Cake
Madeira cake - orange or lemon scented, or marbled with cocoa and filled with a light Italian buttercream flavoured with burbon vanilla, coffee, nougat or fruit like raspberry, blackcurrant, or strawberry.
